Let's Talk Grilled Cheese (1 Viewer)

you can keep your fancy and exotic grilled cheeses - the trashier the better for me.

cheap (like 99c/loaf) store brand white bread
plastic wrapped yellow cheese-like slice
butter the bread - tried mayo a few times, just doesn't do it for me
medium (?) heat
little bit of ketchup to dip
potato chips on the side

god i feel like i could eat a dozen of these right now.

Sour dough
Mozzarella
Tomato
Arugula
Pinch of red pepper flake
Lots of butter in the pan
Med heat so it's GBD when the cheese is melted
 
It has come to my attention that nearly everyone loves the simple grilled cheese sandwich. If this is not a thing outside North America, you are really missing out.

Although the sandwich is simple, the methods of preparation are nearly endless.
  • What type of bread do you use
  • Butter the pan or butter the bread
  • Butter, olive oil, or margarine
  • Type of cheese - or is it anything in the fridge
  • Shredded cheese or sliced
  • Low and slow, or relatively high heat
  • Pure cheese or added ingredients
  • Chips, soup, or something else on the side
Here's mine:
  • Usually wheat bread, but prefer thick cut Italian
  • Butter the pan
  • Butter - I've tried olive oil, but went right back to butter
  • any cheese in the fridge
  • Shredded cheese
  • Low and slow - don't burn the butter!
  • Almost always added ingredients Hot pepper powder or @Darson Hot Sauce
  • Tomato soup on the side
Very similar approach, with a few modifications:

- I like Gov’t cheese on my grill cheese (yes, I know, but it’s what I like - lol)

A fried egg is a great addition! I also put a little mustard on the inside!!

A friend in college would put a very light coating of mayonnaise on one slice of bread. It sounds gross, and I HATE mayonnaise. But I have to admit, it was really really good!
 
Grilled cheese and tomato soup has been my #1 favorite food ever since Taco Bell cancelled the Baja Gordita. You used to be able to get Baja style but it was off menu (~2010), then it got tougher as they really wanted you to order classic Gordita substitute sour cream for Baja sauce (concession 1: tomatos for pico de gallo, ~2014), then sauce was no longer carried but (concession 2: spicy ranch instead of Baja sauce, ~2016), then nowadays they only do chalupas (concession 3: the overly salty, oily chalupa shell instead of the perfect pita, ~2019). Anyways, back to GC&T

Bread preferences are mrs. Baird’s white but sourdough is pretty good
Cheese preference is Colby Jack but cheddar or whatever artisan shit the restaurant wanted to get creative with
Tomato soup at home, the only way to go is campbells canned soup, do half milk half water, and a sprinkle of basil. DO NOT GET CAMPBELLS BISQUE, it’s basically ferret piss.
 
damn, now i wish i took pics.

yesterday my wife made roasted tomato soup from a batch of tomatoes that she roasted and froze at the end of last season. my contribution was the grilled cheese, made on our simple breville panini press. i used sourdough bread lightly spread with roasted garlic, then slices of fresh mozzarella, shredded fresh basil, and thinly sliced grape tomatoes.

Tomato soup should always have fresh basil added in the last couple minutes of cooking. :tup:

campbell's tomato soup is awesome! and i also prefer it half milk/half water, so good call. i absolutely love a mug of it as a nighttime snack watching tv or playing online poker or whatever - though while i prefer the regular, to keep it healthy i nowadays always go with the "heart healthy" version and use only water, but it's still quite good. i also add what most people would probably consider too much black pepper.
 
Store-brand white sandwich bread, store-brand Velveeta, pop it in the microwave for precisely 47 seconds.
This is the way I used to make grilled cheese (though I toasted the bread first).

Once I turned 7 I was allowed to use the stove, and haven't used this method since.

This is probably a childhood thing but when I was very young my parents had no money so we didn't have a toaster or sandwich maker. But we did have one of these clam type toasted sandwich devices. You have to butter both sides of the bread otherwise it'll stick and you "toast" them over an open flame. There's something special about the burnt edges and the gooey center. My mum would make a mix of shredded cheese mixed with black pepper, finely diced onion and green chillies. I'm salivating just thinking about it.

I bought these a few years ago to recreate the memories but I need my Mum to come visit for true nostalgia.

Unless I'm mistaken, isn't government cheese basically Velveeta?
Gov’t cheese is ‘Merican Cheese. I prefer Kraft singles (not the skim milk ones).

If you really wanna get crazy, get the Borden’s think slices.

I draw the line at Velveeta, although my standards are low, I do have them :ROFL: :ROFLMAO:
 
As soon as I saw grilled cheese this thread peeked my interest. I think I love a good grilled cheese sandwich more now than when I was a kid.

My go to is sourdough bread with Swiss cheese, hot sauce on the side. Looking forward to reading and trying other GC that have been posted here!
 
Y’all enjoying sandwiches with a condiment on it. Me, I love some mustard sandwiches, mmmm.

Gimme a break. It’s still a sandwich, but barely. Put some meat or a veggie in there. Live a little.
