Let's Talk Grilled Cheese (1 Viewer)

Great post, I love everything cheese!

Here’s what I do (haven’t done step 1 in quite a while though):

  • Bake my own pain de mie (see photo)
  • Butter insides of bread
  • Place as much shredded Gruyere cheese as possible inbetween slices
  • Butter outsides
  • Slow and low in a frying pan
  • Tomato soup on the side
  • ????
  • Profit

I don't know about that picture but I'm 100% agreement with tomato soup with oyster crackers on top.

I give Gordon Ramsey a ton of deference, but as soon as he spread kimchi on that cheese, I turned off the video. Full stop and eff off back to Scotland with that shit, Gordo.

As far as grilling both sides, I thought it was an interesting idea the first time I heard it. The mythical kitchen crew tested it and said that it didn’t add any crunch and ultimately the extra butter was overwhelming.
(I do not endorse their “humor” - i assume it’s a generational thing and I’m just a cranky old man, but be warned that these kids are pretty annoying)
 
Here's mine:
  • Usually wheat bread, but prefer thick cut Italian
  • Butter the pan
  • Butter - I've tried olive oil, but went right back to butter
  • any cheese in the fridge
  • Shredded cheese
  • Low and slow - don't burn the butter!
  • Almost always added ingredients Hot pepper powder or @Darson Hot Sauce
  • Tomato soup on the side
If you were to add a hotdog to this - would it still be a sandwich?
 
I'm not picky on bread and cheese types as I find the technique dictates the sandwich more. Grilling the inside of the bread first is a must for me.

Also LOL at Ramsey's grilled cheese.

I have mad respect for Gordon Ramsey.

But after watching this grilled cheese video, all I can think is...

Well , where do I start on this? Obviously, GM know a shitload more about cooking than me. However, from start to finish, this grilled cheese gets an “F” in my book.

It starts with the “ thick” slices of bread, the “thick” slices of cheese (which don’t appear to melt), to the kimchi, and finally the ton of olive oil in the pan!

Thick bread is great, but you have to take it real slow with the heat to melt the cheese - not in a rocket-hot fire. Also was I the only one that noticed that when he put the two sliced together, the Romano and the Asiago were both on their same halves? No mix of flavors, just a inconsistent flavor with each bite. o_O

The Kimchi - that might be ok, I'd have to try it to make a judgement call. Acids with a fatty meal are typically very good, so it's based on solid judgement, but otherwise that cold cheese sandwich on greasy toast is a complete failure.

Yes, thick slices of bread are okay (just not my preference in a GCS). When you have thick slices of bread and thick slices of cheese it doesn’t melt to my liking. A grilled cheese is not at all ideal in a super hot cast iron pan in the fire as you pointed out!!! I also didn’t like the ton of olive oil he used which Is totally unnecessary.

I didn’t see the placement of the different cheese in the sandwich (good catch). Agree with you, acidy typically lends itself well to cut through the fats in food. However, idk about the kimchi on this sandwich. Maybe?

A lot of this was surprising to me given his culinary background. I might be way off base here???

Nope - right on base. The only thing that was worse was the bite and "Wow, so good it almost make me want to move to Tasmania" comment. It's either total bullshit, or somehow GR has never eaten a proper Grilled Cheese.
 
Grilled cheese was one of the first things I learned how to cook. I started with butter, but now I spread mayo on mine.
 
I had what is known as an “Inside Out” grilled cheese at a Kansas City brew pub a few years ago and fell in love with it.

Recipe:
  • Spread butter on one side of two pieces of bread. I prefer a crusty whole grain bread from the bakery.
  • Place one slice of bread butter side down in your pre-heated skillet, preferably cast iron
  • Place a cheese slice or sprinkle shredded cheese on top of the bread slice. I prefer Swiss Gruyere. If I don't have any Swiss Gruyere then I go with extra sharp cheddar.
  • Place the other slice of bread on top of the cheese, butter side up
  • Sprinkle about 2 tablespoons or so of shredded cheese evenly on top of the sandwich
  • Flip the sandwich so he the cheese on top of the sandwich is now facing down in your skillet
  • Sprinkle more cheese on top the sandwich
  • Cook until cheese on the bottom is crispy and caramelized and the cheese in the center is melted, about three or four minutes
  • Flip the sandwich again so the other side is down and cook until it is also crispy and caramelized
Best grilled cheese you will ever eat.

I never thought to let the cheese lay in the skillet. I was in KC MO in 2014. Months later the Savoy had a fire. I heard The Peanut has good wings and grilled cheese s-wiches. I was there 2x.

I had the inside-out grilled cheese at the Brewery Emperial in KC. Last time I was there they had changed the menu and the grilled cheese was gone. :(

Don't feel bad as they say. They I don't know. I went back to my fav coffee kiosk, when they reopened in Pittsburgh 2x and was not happy with the pour.
 
Made the the mistake of going bread, ham, cheese, cheese, ham, bread. Cheese tends to run when grilled between two pieces of ham. To top it off, burnt it to a crisp Had to eat it with a fork but still scarfed that grilled cheese goodness.
