Excreting oil is part of the definition of dark roasted coffee. Medium to lighter roasted beans should not be oily.

The ground available in store is not as smooth of a flavour as the fresh beans. We found that outs it was a huge difference. Come memorial day we can bring some fresh ground for you to tryI see it on the shelves but I’ve been drinking light to medium roast since most dark roast aren’t really very good. Some beans benefit from dark roast which makes for a richer cup of coffee but most are roasted beyond dark and are more burnt and bitter. I’ll try the deathwish since I do like a rich dark roast.

I absolutely agree on most Coffee Joey I have found many dark roast to taste gross, bitter and weird finishing flavors. With death wish it has none of those, just a strong natural coffee flavor, absolutely exactly what I was looking for. I didn't want all those weird flavors or the burnt tire taste. This coffee is simply amazing and I absolutely recommend trying it, but ye be warned... it is a lot of caffeine! I drank energy drinks for years and never felt that caffeine jitters like I do with Death Wish and I drink it everyday. No more energy drinks, just a subscription to DW is all I need! Also don't be mad at me if all regular coffee sucks once you start drinking this stuff! Or going a step further, find a quality dark roast and blend it with a medium roast coffee with the origin / flavor profile you prefer. Play with the ratio until you're dialed in on something you can reproduce reliably. Vary the medium roast selection over time to keep your taste buds involved...The flavor of a dark roasted coffee is a lot more dependent on the skill of the roaster and the age of the coffee than the variety of coffee you're drinking.
