Oh good god.
I guess there'd be less variance playing it that way? But as somebody who's not used to 2-7, that's just another curve ball in a game already full of them.

Well presumably it would make scoops much less likely when broadway cards hit the flop. And I'd suppose it would play more like a hi-lo game instead of a "circus" game. But I don't think it really changes all that much besides making decisions even more difficult. Hm, I'd suppose any hand could qualify as low?

I'm assuming draw is 2-7 and Omaha is high because that makes sense to me, but there actually is no evidence that Omaha isn't low as well.
