Thanks to all for the insight here - I think I've definitely decided to go the inlay replacement route for my new set. Putting a pin in this for reference.
Don't thank us yet. Even though 2/3 of inlay removal will probably go smoothly, that other 1/3 will be a serious pain in the @$$. Be warned, and go in with eyes wide open.
