Bought it scaled, gutted, fins removed (leave head and tail on - great meat in head and cheeks).

Washed, dried, cut deep vertical slits in flesh. Coat with olive oil, then rub in kosher salt and freshly cracked black pepper (generous amounts both). On inside, too. Stuff with parsley and lemon slices.

Bake in convection oven at 375 degrees for 20 minutes, flip fish, bake another 20 minutes. Check doneness (this fish was a bit over 3 lbs.). Eat up!

Yield was five good-sized portions.
