I just made a vodka sauce for the first time tonight. I don’t know how, in my 50 years, I’ve never tasted this. And I'm a guy who makes meatballs in marinara from scratch at least a couple of times a month.

Wow, that’s really good.

This is hericia, a relatively rare wild mushroom. I find it occasionally in the fall, usually growing from holes in trees made by woodpeckers.

It tastes and feels a little like shellfish (scallops or lobster or crab, say). I've cooked it here just with a little butter and Armagnac, then served with sautéed shallots and a mild cheese on sourdough toast. Washed it down with Vino Verde (sparkling young white wine).

A true feast, for us at least.
