If you want something right away, grab the Aransas Queen set. If you decide to get a custom set from ABC or Sunfly later (both are really great options), you can resell the Paulsons for what you paid them.

There have been several PCF group buys of the 43mm Sunflys. Off the top of my head: Mountaintop, Old School, Union Station, Mayfair, and Burros. Probably some others. So, there are a lot of those floating around.
 
Get that Arnasas set so I'm not tempted!

Honestly, I havent hosted a game in 10 years, but I want to....and I want to do it with those chips.
 
If still available, that Aransas set is a great price for a nice condition set, as long as the denoms and breakdown work for you.
And it doesn’t seem like it would be too difficult to add 25’s and 100’s if needed.

And don't forget the one sunfly GB that started it all, creating the 43mm mold with the smaller recessed center, - the boardwalks. Agree they are awesome chips, and fairly priced.

Also the Aransas sets in the classifieds are good value. Actually don't understand why they are still around.
 
Your current metal inlay chips wouldn't happen to be the 'Jackpot Casino' chips would they?
 
I guess that you and me are almost in the same situation. I'm a total rookie with poker chips, but when googling I found a bunch of youtube videos that was about different sets of poker chips. Most of them were made by @Hobbyphilic and organized into a single playlist. It will take some time, took me several days to go through, but it is very educational and you start to understand small differences between sets in quality, attributes, types etc. I highly recommend you to have a look at them.

Also, like the others advice, I have ordered sample sets of chips that I liked and can recommend that as well.

Hehe, then you're thorough like me :-) The videos made us go in opposite ways though, but that's the beauty of it! Looking forward to see your ceramic chips when you get tem, please post an update here when it's sealed!
