so have seen plenty of posts showing Apache case set up with Apache 43mm racks, and also set ups with 39mm racks, both Justin & regular ... any thoughts on "just" using chip boxes. Yes, i get it's not as "baller" but functionality-wise, anything wrong with this aside from not being able to see the chips?

The chip boxes aren't as durable as chip racks. Eventually, they'll start to break or rip at the corners. But they'll work.

Warneke “chip boxes” are good for mailing and that’s about it. Or maybe a rack ur saving for collecting purposes that you don’t touch. But certainly not something to put chips in and out repeatedly.

Nothing wrong for the short term, but long term the boxes will rip from wear and tear.
