I realize this is a poker chip enthusiast forum but regular people don’t like massive amounts of chips in play. Two racks per person is ludicrous. My group was as loose as they come. The amount of chips in play doesn’t mean anything.
If you are trying to get encouragement to buy a ton of new chips you are in the right place though.

Thats TV poker....the ONLY place you will see that in the wild. At a casino the floor would highly suggest you color up and may force you to. Here are typical non TV/ final table stacks.

Your apparently limited experience is a bit incomplete.
There are very few chip collectors in the BARGE tournaments (maybe three of us?), yet there are always 3-5000 pink snappers at each table for the up to eight tables of 7.50/15 cash games. The casinos actually top off with 10-20000 extra pink chips most years.
Why do you suppose the casinos (including Borgata (formerly Taj), Binions, Nugget, Mohegan) do that?

In my experience, most people love having tons of chips on the table. I don't like it, because I think it wastes a lot of time and often interferes with play as people are constantly stacking. But most people seem to love it.

Also never saw a $7.50 $15 game. Not saying I don’t believe it but seems like a stupid limit for a casino to spread because of it requiring .50 chips.

At BARGE/ATLARGE/FARGO/EMBARGO pink chip games in Vegas, AC, and Mohegan, for example, the typical minimum starting stack is two racks, and that's for at least four tables. The host casinos often buy an extra 10K pink chips just for the event, and then they remain available for limit games all year long.
That's the pink chip game. No fracs involved. So all that time you spent in AC, and you never came across the pink chip games at the Taj, Trop, or Borgata? They've all hosted ATLARGE (which started in 1995 at Resorts. Taj for many years, Trop in 2014-15, and the Borg the last three years.) The casinos seem to love hosting that game with all those chips.
(I keep 16 racks at home for single table limit stud games. Right now, they're AS $1s...)

Swings to $1,500 and even $2,000 weren’t uncommon. Pots were sometimes so big it took the dealer five shoves to push the chips. Then, it took the next three hands to finish stacking.
