Gotta get the tendon and tripe and flank too.
Take the rare steak and tenderize it with a bit of herbs (green onion and cilantro is my go to) and some lime juice before placing it in the broth. It's magical. Some places may already do that by default.
Where we go that is what I get when I get Pho the "House Special Pho".
