The bigger the antes, the bigger the average. 
So I guess the only other way to extend the play in the late game is to make the levels longer as the tournament goes on. Say start with 15min blinds for a couple levels, move to 20min, then 30, then 40 after the bubble bursts and 60min at the final table.
The commerce casino in LA has introduced "elevator tournaments" where the first level lasts 5min and they increase each level by 5min. Apparently the FT and especially the HU were super deep.
