I'm interested in reassembling a cash game set to host 6 or 8 people on a regular basis. As much as I love the feel and sound of clay chips, the price point and their relative fragility is making me think casino-grade plastic might be more practical. I know some of brands such as Bud Jones, Abbiatti, etc but I was wondering if I could get more information on people's experiences with premium plastic chips and any downsides I might not be recognizing.

I love high end plastics. These days you usually get more bang for your buck with them than with clays, though there are exceptions of course. While plastics won’t wear on the edge like clay chips, especially the ones with metal inserts can certainly crack if mistreated.

Clay chips handle better, plastics are more slippery, though I feel this aspect tends to get blown out of proportion. The handling/stacking experience is different between manufacturers, molds and weighted/unweighted, so get samples. Also the condition/wear of the chips makes a difference.

If you want to customize your chips, replacing the labels on plastic chips is generally easier and can yield better looking results than with clays (real clays with inlays have had their labels compression molded into the chip, which can’t be replicated).

Bud Jones, B&G, Abbiati, and Matsui are the top-tier casino plastic chip manufacturers. Only the latter two companies sell new/custom chips to the general public.

Personally, I find them all to be very pretty but lacking in the tactile experience I seek in a poker chip set.

Get samples.

I signed up for them! I just read a ton of information on the compressed clay chips so I was hoping to get more information on the plastic chips before the samples turn up. I am slightly worried that once I receive the samples, I'll go with the Paulson's but mpivei made me hopeful that the premium plastics will meet my need since I don't think I'm at the budget for Paulson's quite yet.

There are Paulson clays that are available for less than the price point of high end plastics, and there are some that are much more. Just get to know what you're potentially buying.
