For an 18 player bounty tourney ($20+$5) where $10 is removed from the pot, which payout is best?

Yes. We have a wide disparity in skill levels. It helps to bring people back.
We also have a wide disparity of skill levels, and some pretty solid player retention. We even had to cut down our invite list a couple years ago, because 4 tables was too much. The house just isn't big enough.

I don't have any issue with rebuys making the field payout deeper, and would happily play in such a game. I chose to limit the payouts to a percentage of actual people though, because the bigger payouts keeps the great players - the ones that could make a couple hundred elsewhere - choosing to play in our game instead. We still pay about 25% of attendees though, so even the worst player in my league has cashed in 11% of the games he attended.
 
Find another place to host so that all buy in money stays in the prize pool.

In this spot I would pay 3 spots since much of the prize pool is being taken out.

1st 50%
2nd 30%
3rd 20%
15% of the field gets paid? I’m out.
 
I do, in theory, had 1 structure that could payout 15%.

When I use the Empress Star chips, I use a blind structure and the pay table from actual casinos, though without the rake and paying out 1 person deeper than the casino.

That structure was from Treasure Island, in Las Vegas. I would pay 15%, if we had exactly 26 players. Now that TI no longer pitches poker, that structure is dead to me.

I would be interested to know though @Kyle , how often to you see chops?

Not many. Often chops happen based on the time of night but more often then not we play from start to finish.
