I know @BGinGA has a chip break down and structure that uses a $300,000 starting stack. I want to tweak it a hair so i can eliminate the $500 chip.
Available chips are as follows
#200 $1,000
#150 $5,000
#150 $25,000
# 75 $100,000
# 25 $500,000
# 2 $1,000,000 Plaques
Game plan is for a 10 Person Tourney w/ Re-Buys (knowing my crew there would be 2 re-buys some nights all the way up to 8 to 9 re-buys on others)
Plan on using starting stack of

Was thinking about this for Levels/Breaks etc.....

Ideally this would be 4 to 5 hours if only 8 players with 2 or 3 re-buys.

I’d add a 1000-3000 level to avoid 100% blind increase from L2 to L3.

I’d also drop 5000-10000 level. It’s a little bit off compared to other blind progression and anyway it’ll not allow you to race off any chip.

T300K for 8 players + 2 rebuys makes 3M in play. Tournament shall end when BB = 5% of this = 150K.

So just adjust the blinds level duration accordingly and adjust if required the starting stack.

^^ Agree with both of those modifications.

I'd also drop the 50k/100k and 125k/250k levels (same reason as above), and color-up the T5000 chips after the 60k/120k level.

That would have the tournament finishing by Level 14 (60000/120000) for 8 players (4:40 plus breaks with 20 minute levels), or by L16 (100000/200000) for 10 players and maximum re-buys (4:30 plus breaks using 17 minute levels) -- keeping both within your desired time frame.
 
Yeah +1 on adding 1000-3000 (or 2000-3000) to the structure and removing 5000-10000 as @Kid_Eastwood and @BGinGA said. This gets you to the same place at level 8 anyway.

To add to bg's suggestions later in the structure...

For levels 13-16, instead of 40k-80k, 50k-100k, 60k-120k, 75k-150k, I would suggest
40k-80k, 60k-120k, 80k-160k, 100k-200k instead. A little more consistent increase and you aren't removing the 5k chips until the break anyway so 80k-160k is playable instead of 75k-150k.

Either that or dump 60k-120k and go for 40k-80k, 50k-100k, 75k-150k, 100k-200k.

in either case maybe also play 150k-300k before the break so then you can color up both 5k and 25k in the same break and then continue at 200k-400k and copy all the levels from 3k-6k onward by multiplying by 100. Or in the latter case, play 40k-80k immediately after 30k-60k and take the color up break then, then do the 4 levels before taking the break to color up 25k.

As for starting stacks the original suggestion of 15/12/9 is probably best. You get 12 starting stacks that way. The alternative is 10/13/9, but you can only get 11 stacks out of that because of the number of 5ks you need. But if it's a 10 player tournament, either would work. Plenty of chips for color ups and to issue rebuys in 100k chips or a combination of 25k and 100k chips. You probably won't even tap the T500k or higher.
