Haven't "grilled" steaks in probably 8 years now.

Smoke with lump charcoal at 225 until internal temp 110, then reverse sear.

I should’ve taken a picture after cutting into this beautiful ribeye to show the perfect medium rare but was too busy scarfing it down.

I cook my steaks almost exclusively on cast iron and finish in the oven on broiler setting.
