Recently purchased the small stake isle tourney set and not sure what the proper structure for a STT with rebuys and add ons would be. Chips are as follows

200x .50
200x 1
120x 5
60x 25
20x 100

That's a good structure. If you need to speed up the game you could remove 4/8, replace 6/12 and 8/16 with 7/14, and remove 12/24, and still have smooth blind increases.

For length I’m thinking 2.5 hours. Not really sure how to adjust based on preferred run time. I’m not a big tourney guy. Normally 1/2 cash is my game

As a rule of thumb, your tournament will end when there are 20 big blinds in play. 10 players x 200 = 2000, so the game will end when the blinds are at 50/100. Work backwards to make sure blind increases are smooth (avoid 2x jumps), and adjust level length appropriately. Remember to figure in for breaks.

I usually end rebuys at the first break, but definitely before a starting stack will be 40BB or less, as this leaves very little playability, and quickly becomes a shove fest. I will usually offer a half stack add-on for half the buy-in.
