Reverse seared. Started in the oven at 200 until it hit 120 then finished it in the cast iron. It was one of the most tender steaks I have ever had.

Awesome! In Lawrence of Arabia's memoir, Seven Pillars of Wisdom, he ate that with the armies - they ate entire camels. Albeit, fresh, never frozen! Great book, I do have to re-read it. Looks amazing. How was it?

And the very next day: Flew home, straight from the plane to a friends house who made some steak salad out of sirloin and beef tenderloin!

I didn't know salads taste this good! Maybe I should become a vegetarian?
