Hi guys. I have been running a one table tournament for a couple of months and have decided to push the boat out.
I am hosting a two table tournament with 16 players.
I think I have made a mistake with buying some custom chips, but Im in now!
My chip values are
5,10,25,50,100 and 500

My main question is what should my starting stack be ? I want the tournament to last around 5 hours.
I think I can do the blind structure by almost doubled every 20 mins.

Any advice is much appreciated

Yes, you screwed yourself with the 10s and the 50s.
With the damage already done, you could do a T5-base T1500 tournament with starting T5/T10 blinds; colour ups use T500
Not much room for rebuys unless you keep the T50s in play.

20min blinds will get you about 6 hours. 18min blinds gets you about 5.5 hours.
 
I agree, the T10s and T50s should probably just be shelved. I would tweak @allforcharity’s structure a bit. I’d make the starting stacks either 2,000 or 2,500 and start the blinds at 10/20. That avoids doubling the blinds between levels 1 and 2 and still starts you with 100 or 125 big blinds. If you expect to allow rebuys, use the 2,000 stacks (you don’t have enough chips for 2,500 with rebuys).

Starting stacks would be: 10/10/7/2 or 10/10/7/3 (T5/T25/T100/T500). For 16 players, you will need to have two stacks of 5/11/7/2 or 5/11/7/3 because you don’t have quite enough T5s.

With the 2,000 starting stacks, you have enough T100s and T500s for 5 rebuys on top of the 16 starting stacks.

I would make the first few blind levels:

10/20
15/30
20/40
30/60
40/80
50/100

The rest of @allforcharity’s blind structure looks right.

Bit I think the tournament should end around the 1,000/2,000 or 1,500/3,000 level if my math is right. That means 16 levels — 4 hours plus breaks with 15 minute levels; almost 5 hours plus breaks for 18 minute levels.
 
Yeah, your set denoms and breakdown sucks. To make it work, set aside the 500s and use the 50s as 500s. You will also need to use 5x 10 chips for 16 players, but none for just 15 players.

T5-base (5, 10, 25, 100, 500), 15 x T4000 starting stacks of 10/0/10/7/6 chips each (plus one stack of 0/5/10/7/6). Deep-stack 200bb to start using 10/20 opening blinds.

Yes, I am going to echo everyone else here, shelve the 10s and 50s. From your remaining chips of 5/25/100/500 you can still get a decent base T5 breakdown with T1000 starting stacks for 15 players

15 stacks of 10/10/7
3 "bonus" stacks of 0/16/6

That will deplete your T5, 25, and 100 chips. You still have all the 500s available for rebuys and color ups.

If you could add 50 T5 chips, and 25 T100 chips, and maybe 25 more T500 chips, you would have a pretty good set for 20 player tournament.
