To preface, I already have a great setup for a T5 tournament, 2.5k starting stack, supporting up to 10 people. So if this isn't a great idea, I always have that to fall back on. This is more of an experiment to see if this would be realistic, and if so, would it be more fun than the T5 tournament.

Factors to consider:

Denomination Limitations:
$25 - 136
$100 - 100
$500 - 84
$1,000 - 58
$5,000 - 1 (Plaque)

Players: Max of 8.
Length of Tournament: ~5 Hours

Starting Stack: (16/11/5/3) $7,000
Starting Stack (with on-time bonus): (16/11/6/3) $7,500
Max Chips Needed:

Rebuys: Max of 3.
Blinds Increase: ~19 minutes
Starting BBs: 280/300 (on-time bonus)

I feel like I've got the theory part of tournament breakdowns understood, but with not having a lot of tourney running experience, I wanted to run it by some of the more experienced vets here.

I wanted more starting chips for the players so instead of (10/10/7/3) in the T5, this provides a bit more (16/11/5/3). Do you think this would more enjoyable than a T5 since it starts with more chips and a bit deeper of a stack?

My concerns come from the initial 3 blinds being a bit awkward, and the $500 chip being too necessary in the late game.

If I need to provide more information, lemme know!

Just reading this now, how did things go?

Compared to your T5 the t25 with 7500 in chip would likely have played faster and more aggressive than the T5 with 2500 in chips. How did it work out?
