Kawana Waters and Cardroom are one point larger.

So this is what I'm thinking colour wise...

.25 - Huntington Park
1 - Silver Saddle
5 - Silver Saddle
20 - Lakeshore Inn
100 - Huntington Park

What if you changed the colors of the Lakeview type to the color of the darkest spot on each chip (and the dark brown base color on the $20)? It would be subtle -- the text would still look dark -- but might augment the scheme.
 
I am a strong advocate for more bang for your buck. If the chip base/spot colors work with both a light color label/inlay and a dark one, then why not have a different design on each side of the chip?
 
I still love the inlay on the last page the best, without being too critical I get 2010’s trendy tavern vibes from the white inlay above.
The Breakwater was a pub here in Perth on the Northern coast for some reason this really reminds me of it. Super personal opinion lol

I like this idea and I've seen it done on many great inlays but I found it clashed with the blue waves.

It would definitely work if that was the only colour feature though.

Maybe you could match some elements with the chip color?
 
I like this setup the most because it feels more balanced and simple. The only thing that bugs me a little is that it doesn't feel like a lake. It got more of an ocean/coastal vibe going on.
I quickly mocked this up to illustrate how you might could make it a bit more "lake-y".. :D Do with it as you feel like:

Yep, that’s been my biggest hurdle. Not making it look like the ocean.

It’s an urban (man made) lake and only about 2km from the beach. So it is very coastal and doesn’t have a lot of high ground around it.

I might need to look at alternative imagery.
 
FWIW, because you say "Lake" on the chip, I assume the water is a lake. No sunset/sand in the distance means it's not the ocean (at least to me).

If you put a small boat like a canoe or kayak, that's definitely "lake" vibes, at least here in the States. A few green hills/mountains behind could make it feel more inland.

But as mentioned before, any of those three previous mockup options are winners to me. Sometimes we end up chasing our tails with chip design, and you can't please all viewers. But you're the viewer who matters most.
