I'm about to start building out my first cash set, for a game that isn't running, yet, but I hope to have it started by the end of February.

I can see blinds being in the .50 / 1 range, and probably have a ballpark of about 5-7 players starting out with blinds increasing to 1/2 and players increasing to 8-10. I'm thinking to get started my first chips would be 500 to 600, with 100/200 .50s, 200 $1, and 200 $5. Does this sound sufficient to start?

I do expect the game to expand to a full table so I would buy additional chips as the number of players and blinds increase. Does this sound like a good way to approach it?
 
Right now your Bank is only $1250 or $1300. Depending on Buy-in amount & rebuys this might not be enough even for 6-way.

I doubt you will need 200 fracs so I would go with just 100 & with the other rack go with 60-80 $25 (or $20 if that's your preference) & a barrel or 2 of $100's.

You will only need at most 40 x 50c for a full table as one will never use more than 3 per hand and most likely cases only once per hand

Most ppl on average buyin at least 3x (either via topping up or rebuy) for cash game so you will prepare at least that amount for your bank roll

50c x 40
$1 x 200
$5 x 200
$25 x 80
$100 x 20

Will be the bare minimum breakdown I will suggest

.50 lets you need few chips over a .25, but the cool kids all buy fracs that are non-denominated.

If you will never go below 0.50/1 in stakes, then I would argue that 40-60x 0.50 is all you need for one full table. Balance out the total 600 chips among the other denoms with about 200x each workhorse ($1 and $5). You will want at least a small amount of $25 to start.
 
What’s your goal for stakes. I have a cheap game I hold that’s very popular where all chips are .25 - that’s right, a quarter. So I have 400 quarters.

It’s a family and neighborhood friendly circus game setup but they love using chips. It looks like with your planned setup that 50 fracs is the most you’ll need, but be prepared for pretty big wins and losses at those stakes. If you are just starting out learning curves are costly.
 
For .50/1 you should only need about 60 half dollars as they'll primarily be used for the small blind, and even if you bet with them you'll only use 1 at a time. Adding some 25s and 100s gives you enough bank to play 1/2 with 9 people and cover rebuys. Without 25s or 100s your bank won't cover a $200 buy in for 10 players. Even for .5/1 $1300 is a bit light. That's 13 buy ins.

If you want to start small and expand later I'd begin with

60x50c
200x1
200x5
40x25

That's 2230, which should cover 6-7 people at .5/1 if you're not too loose with rebuys (3 buy ins per person).

Also I'll echo the sentiment, if you or your friends/players are new to poker $100 buy ins are quite large.
