Not everything. If something is in high demand, it will be gone in under a minute; probably under a half minute. But sometimes stuff will last for an hour or a day or a week.

i was thinking of getting some of the jack chips. Is it worthwhile? I know the photos show them as pretty used, and i was wondering if it would be worth it to try and get some 1, 5, and 25s to start a jack set. It would be my first "Real" Set to collect.

A few minutes before the sale, sign in to PayPal.
Refresh the first post of this thread often at the start time. When links appear, GO!
If buying individual chips (not sets), be mindful of quantity restrictions for the first hour of the sale, or your order will be cancelled and refunded. After the first hour, buy all you want.

Edit: I guess there’s quantity restrictions on sets as well, but far easier to figure out than individual chip percentages.

Agreed. Especially desirable chips that are still available at the one hour mark…they seem to go in seconds as soon as the restrictions are lifted.

The rest are "normal" 39 mm with the exception of the Majestic Star 1K and 5K cash chips which are oversized 43 mm.
