This is a dinner thread and some people I get aren't hunters, but it's legal, they're tasty, in season and we ain't hungry bro!!

No BS here she worked 2 days on a custom low cal Pot Pie that fit into my diet!!

It was delicious but again on the healthy side, so not much butter or salt... still delicious for a guy dieting and trying to avoid carbs. 45 pounds gone and still going strong!!
 
Living off the land. I'm thoroughly impressed. We have such plump rabbits running around that I've been tempted for years to harvest a sample. Perhaps we need another thread for locavore living!
Don't even get me going on Rabbit! Again I try to stay respectful of everyone but, if you make that decision your only regret will be that you didn't do it sooner! Absolutely fantastic!! Feel free to PM me on any questions.

I fricken love Backstrap steaks. I slice them about an inch thick. Very light salt and pepper, and cook them in a cast iron pan. Serve them medium rare!
So we prefer doe or sika back straps for actual steak eating, I save the buck back straps for baking in the oven.
I do mine about the same an inch to inch and half thickness and braise both sides to get a nice crust on them. I made them last time with a broiled steak seasoning, rosemary sticks, garlic and pepper, Ben really liked those and asked for them again. We really need to get another sika this year.

I'll grab a pic next time we cook em up, I gambol and eat my steaks rare, even if its wild game. We freeze everything in vacuum sealed bags and handle all the processing ourselves so theres little worry to any out side factors of poorly handled game that could make us sick. I generally try cook Ben's somewhere between rare medium rare just to be on the safe side though. Sika steaks are fabulous, I'm glad Ben introduced me to that kind of deer. You can cut a cooked steak with your fork

Sounds like Ben and I like them cooked the same way!
 
Have you tried doing any game "sous vide". I'm imagining it could be tender and rare.
No I haven't, I've seen pictures here of that cooking style(?) mentioned but do not know what it is or how to prepare it. We do love some au ju though! (Probably not even close to the same thing! Lol)
 
I’m OK with a squirrel or rabbit. I’ve had both, prefer rabbit. I found small game a lot of work to prep/cook and can’t justify hunting something i won’t eat. Only shoot paper these days. I guess I got this after a stretch of quail hunting. Cleaning small birds and still finding shot in your food. Now venison, gator, or caribou is another story.
