I just saw some chips for sale with this unusual weathering/denting on the edges of the chips. Anyone know what causes this?

Yup. A warm enough environment to soften the "clay" mixture and then pressure from resting or pressing against something to create the dents and flattened areas. Probably quite warped on the surfaces, too.

I've had some vintage Burts/ASM chips that were bent over more than 45 degrees over who knows how long.

Those dimpled edges happened to some of my chips…twas told I clamped down on them too hard when I flattened them, most likely.

Some older racks had protusions in the end barrels that could cause those types of marks on softened chips.
