For what it's worth, there seem to be a fair number of the Dunes $5s out there, but probably not all that many $500s (maybe someone can confirm). I think @Spinettis Gaming still even had the $5s last time I checked.

@Spinettis Gaming has both uncirculated and circulated Dunes in $5s, $25s, and $100s. I bought theses $500s in anticipation of purchasing a full set from them but then those Ruger chips showed up and I am a week scrub donkey.

I was contemplating purchasing a complete set of uncirculated Dunes with a 300 chip count. Taking the $5s and selling the rest would be a piece of cake.
