Hey, don't diss century egg without trying it! I used to have it with rice as a kid. It has a very strong taste, but pair it with tofu, porridge, or pickled ginger and it becomes very good. Kinda tastes like ripe blue cheese with a slight bitterness.

I really like mine with porridge. Add some salted duck eggs and pork as well for a more complex bite. I like having all three with spinach too:

Over medium, in a ham sammish, bacon, tomato, mayo, lettuce. Da best!!! It's a tradition after Thanksgiving or Christmas. Fry up the ham leftovers with egg, have ham and eggs sammish.
 
Appears to be similar to goetta, which I've tried a few times and really didn't do it for me.
 
I love eggs pretty much any way, except overcooked and rubbery. But chilaquiles is one of my favorites, as well as sunny side up, over easy and poached. And just-barely-set boiled, on Swedish rye crisps with butter and Kalles! And can’t forget soft-scrambled with smoked salmon and caramelizad onions!

i love eggs. over easy is my go-to, but i like them in every other form mentioned here too. except balut - i do strongly prefer them unfertilized. even century eggs are surprisingly delicious, despite looking like death:

Century egg and pork in congee is a staple food for, like, a millions upon millions upon millions of persons of Cantonese-speaking descent.

Over easy is good otherwise. I like mine in a benny when I can.
 
if the eggs aren't completely cooked they can make my tummy upset. I love a fried egg with a really runny yolk, lots of salt and pepper, buttered sourdough to dip in it.... but it doesn't love me.
