Was just watching Donnie Brasco for the millionth time - great movie - and decided to try and work out what chips are used at Kings Court and are visible during the bust. Turns out they are BCC Casino de Isthmus. Look away at 2:58, as the deputy goes the sledge hammer on the table and I did not see any disclaimer at the end of the movie claiming no chips were harmed in the making of the film.

Hard to say at 480p but Casino De Isthmus is a good guess. The shot where they hammer the table is the best spot to pause the hd version.
