TWO HUNDRED degrees? I guess I'm missing something, because that sounds like "shoe leather" to me. Isn't that like 40° past "well-done" ?
Well actually -

For perfectly tender, shreddable pulled pork, pork shoulder (or butt) should be cooked to an internal temperature of 195°F–205°F (

). While safe to eat at 145°F, this cut requires higher temperatures to break down tough connective tissue. Aim for "probe tender," where a thermometer slides in with zero resistance.
 
Ohhhh it's pork. Sorry, I was thinking beef because it said "steak" but of course "shoulder steak" is pork. That makes much more sense now. :)
