No. It'll look like shit because it's recessed and totally over stamped, and you'll have a huge rectangle pressed into the mold.

Yes. This is the way.

IMHO the only way to do this is with a color matched laminated label. Apply the label and hot stamp it after it is on the chip. The same process casinos use to cancel chips.
