When I set up my Blackjack tables, I have enough chips to cover 7 people playing at any one time with limits of 5-1000.
When I set up my Craps table, there are more than enough chips to cover 16 people throwing chips everywhere.
Same for Roulette.

And FYI, this is all for casino PARTIES (no real $ involved).

When it comes to Poker... I haven't a clue as to how the chip tray should be set up. I've looked high and low and figured this would be the best place to ask around all the big poker players! Up to this point, I just load it up with 1's, 5's, 25's and 100's... and sometimes some 500's as well. If anyone has any insight as to what it should be or what it should look like, I'd be grateful! :)
 
Depends on stakes, but the dealer tray in poker is for making change, mostly. And color ups when a player is leaving. Usually, buyins come from the cage.

So I would say a fair amount of ones and fives, with one row dedicated to a split between $25s/$100s.

A guy in Vegas mentioned doing exactly that, but it would be difficult for casino parties and then require a TON of more chips... plus a dedicated space and personnel for overseeing that. For private home games... definitely! :)
Typically the events run 3 hours and guests start with $300 in fake $.
 

At the blackjack tables where I worked, the trays had 12 rows and held around $30,000 in chips at a $10 table and the highest denomination chip was a $500.

In the high limit room, where the minimim for blackjack was $50 a hand, the low-end chips were $25 and they had $1,000 and $5,000 chips. Probably close to $100,000.

I do casino parties with six people at each $5 table and each blackjack table gets:

60 x $0.25
40 x $1
20 x $2.50
180 $5
40 x $25
20 x $100
10 x 500

After each of the six players gets a barrel of $5 chips ($100 in chips) you have 60 x 5 and your other denominations.

I am a former dealer, in France: for roulette: 15000 times the minimum bet of the table, BJ: 3000 times minimum bet

Interesting! Had no idea how the bank was determined!

For our parties, everyone starts with $300 and the minimums are 5 to 1000. I try to go a little extra on the 5's, however. May need to rethink the starting bank! :)

I think for poker we do 2/5 blinds.
