If I RSVPd, showed up on time, and still didn't have a seat behind 4 people who didn't RSVP, I'd be highly upset. When somebody RSVPs, it's up to you to tell them they may not have a seat if that's the case. Otherwise, a player can reasonably expect they will get to play when they arrive on time.

Sounds to me like these are games players may want to avoid from now on. Too many people in the know about them. (Assuming rakes are illegal in NC, which I'm pretty sure they are.)

I'd go with tournaments instead of cash games. Then, you could set the stakes to anything, including nothing. To add an element of fun, have a house trophy or something that the last winner can brag about and lord over the rest of the family or something.
