Either Canary or Yellow -- they are pretty close. If forced to choose, I'd guess Yellow.

Got any yellowish Star chips?

I compared them to ES cash $20 & $25 and ES primary T5K yellows (which all seemed to be the same I think) and they did not match with the Pyramid and Emerald Princess. Which yellow are the star chips?

Those stars are all Canary, which would bolster my opinion that the EPs are Yellow -- very similar hue, just not as bold/bright. Check against an AS T1000 if you have one.
