I prefer multiple smaller sets as I like variety and I'm fortunate that one of the groups I play with plays strictly freezout tourneys that are almost always one table. The other group I play with usually only has 2 rebuys and is always a single table as well. Because of this I can get away with using 300ct sets when I'm supplying the chips. If I had to choose though I would pick one large set as I do host an MTT semi-annually with re-buys and add-ons.

I think multiple sets set up for different stakes would be ideal. I would choose a .25/.50 set, a $1/$2 set. Instead of a third small, I might add $.05 chips to the $.25/.50 set for micro stake games, then add some $100 chips to the $1/$2 set so I could cover $5/$10.

how about multiple big and a few small? I like to have sets that could cover anything from an monte carlo, multi table mock casino, multi table/stakes cash, tournament and for multiple tables. having a few sets while limited to just 1-2 tables feels constrictive to me, So lots...

The Big sets, HSI Primaries (mostly) for tournament or cash or pretty much any stakes 1 rack of snappers labelled as quarters. Also my CPC and Cards Mold Sloth Club sets as primary/secondary for my own home fantasy. Everything is meant to be played with so no worries if there is a bit of splashing or pizza eating etc...

and the small sets,

HS-Cinci 36mm tournament chips, MS 36mm tourney chips and A.C.D.C cash chips for more focused play than the sets above that can cover anything.

and the worthless,

the denom chips have been board game cash replacements and children's math unit counters as well as poker chips, cheap but very useful and stack/feel better than they should for the cost. Also you can't go wrong with Nexgen Lucky bee's

so 3x big sets (more like two big sets) and 3x small sets plus two cheaper sets.
