I’d leave zero evidence of any of that myself
Especially if it’s in a grey area having a game in your state

At most paper ledger with no names and shred it once the game finishes

I’ve got a running spreadsheet. Helps me track who’s coming or not, what they bought in, how (cash or xfer) , and left with .
I leave it up on a monitor for everyone to see, being the cashier and it a home game I’d rather the full transparency.
Also adjust the stakes every now and then so helps me organise stack sizes and how much is in bank/ out in play.

I use a slightly different method but it works well.

I believe in full transparency, so I send the local newspaper the results from each game.

Haha I should clarify the transparency is for when people transfer to me and I back if/when they cash and for the amounts.

I newsletter would be actually pretty funny thing to do end of year or something.
