I am opening a 3-table room with a mixture of cash/tourney being played. I am interested in custom Sun-Fly chips and paying a designer here for artwork. Do you have general advice for how many chips I will need? 2,000 of each? Is $1/chip a safe estimate (assume cash and tourney artwork)?

Cash - Mixture of 1/2, 2/5, 5/10
Tourney - Ideally 10K-30K starting stacks

Thanks!

I was thinking 2000 cash chips and 1000 tournament chips for 27 seats. Seem okay?

While the cash games can run smoothly with a 4 level chip progression, there are good reasons to plan on fewer levels of chips and { a lot } more small value chips. So $1 and $5 chips for 1/2 and 2/5 & $5 and $25 ( or $20s ) for 5/10.

Saving money on chips is not a good place to be frugal. Full custom chips. Separate cash and tournament sets. A bigger chip bank vs less. I think 2,000 chips is too few.

Totally depends on what games you expect to spread simultaneously to figure the right cash breakdown. Always three tables of the same game or probably a mix? What combos?

I'd think it'd be best to budget at 3 tables of 1/2 and then 2 tables of the higher stakes. Then you can run 2 tables of 2/5 and a 5/10 and vice versa.

Yeah I would think the same if I were guessing but my local underground club for instance spreads a single game on different nights.

Tuesdays and Thursdays are $1/2 NLHE. Fridays alternate between $1/2 Lazy Pineapple and $5/10/15 Stud 8. Saturdays are $2/5 NLHE and Sundays are $1/2 PLO and $5/10/15 Tahoe mix.

I don't know if this is a common where OP is opening but it seems to be the way around here.

I'll leave it to the cash game experts here regarding those set requirements, but agree that more info is needed to make a good recommendation.

For a 27-player tournament with 30K stacks, I'd go with something like this:

220 x T25
220 x T100
180 x T500
180 x T1000
180 x T5000
20 x T25K
------------------
1000 chips

Allows up to 27 x 30K stacks with 9 re-buys using T5000 chips (or 40K stacks without re-buys):
8 x T25
8 x T100
6 x T500
6 x T1000
4 x T5000
------------------
32 chips = 30K

and allows for up to 18 players (2 tables) with stacks using a 12/12/5/x/ breakdown. Smaller starting stacks obv no problem. Plenty of chips for color-ups, re-buys, and spares.

$1/chip is a reasonable estimate for decent custom ceramic chips. I think the Bwalk ceramic hybrid chips are a very good choice for a tournament set, and would also be a reasonable choice for a cash game set if you went with blanks using an aftermarket custom label for security purposes.
