I was putzing around with an idea for what a possible tournament set could look like. I've barely scratched the surface of how to actually use any graphic design software so the inlay is pretty rudimentary, but I'm pleasantly surprised at how they came out for a first try.

I'd love any input from more experienced chippers on how I can improve the design of the inlay or the chips

Without comment on the design, I highly recommend using one of the forum graphic designers. The formats have to be in a vector format, and they have designed a lot of sets and know what sizes work. It will also depend on the size of the inlay too. For s chips colors, it will probably be best to use the standard colors. spot patterns and progression are even more contentious concept than chip colors. Spot colors usually work best as compliment and/or contrast from the color wheel.
