So I need to make a set that can host a variety of games.

It must be able to handle this

Senario 1
5 tables 5/10

S2
3 tables 10/20

S3
2 tables 25/50
1 table 50/100

S4
3 tables 50/100

S5
2 tables 100/200
1 table 250/500 pot limit

S6
1 table 250/500 limit
1 table 500/1000 limit

S7
1 table 50/100
1 table 100/200
1 table 200/400
1 table 500/1000 no limit

It is hold em poker

How big set to I need to able to cover each senario and what values ?

Can you clarify the value? is 5/10 equal to $5/$10 or .05/.10?

You will need a pretty big set is you want to cover everything up to $500/$1000 no limit

I would say no to 10's and 50s and load up on your 5s and 25s. I don't play that high of stakes in the US, but I think you would want lots more $5s and $25s to cover 5 tables of 5/10

I think I should keep the 50s for 50/100 tables.

No need. The table would have 95% only 100s and higher denom chips with only 4-6 25s per player (average) to cover the blinds. Much like a $2/$5 table in the US.
