I don't remember where I read it, but I heard that Baccarat keeps a separate P/L from the rest of the casino. So to help track it, they use different chips.

Although I have nothing to back it up, this was gonna be my response as well. When you see Vegas casinos, the city, county, and even state numbers - it’s always broken down to slots, table games, and Baccarat separately. Wonder why that is though...

1) Baccarat chips are somewhat larger than the casino’s standard chips. Since baccarat was originally a high/mega roller game, perhaps the purpose of larger size chips was to make it more difficult for dealers to palm them
2) Baccarat was a “prestige” game. Perhaps marking the chips “Baccarat” was to encourage players to keep the chips as souvenirs which they could show off with a few gambling war stories rather than cash them in
I especially like the $20 Baccarat chips. I have a couple from the Dunes and am planning on adding more
