How do these compare to Paulson chips, are the slippery or can you shuffle them nice? I think I want a set, so your numbers above are what's in a set ?

These are not as good as Paulsons, they are China Clay - but they are good chips for the price. I have a set of these and they are played at least 2x a year (out of 8 games/year).

I can shuffle them just fine, but others have had issues with the cross-hatch texture. The sides are beveled, making them easier to shuffle, but they also feel a bit thin when holding a single chip.
