I'm looking to finish adding onto my tournament set for mostly 1 table tournaments. 2 (or maybe 3) tables would probably only happen rarely and definitely not anytime soon, but I want to future proof.

I think my set works OK right now for 1 table T5K SNGs/tournaments:

110 T5
140 T25
200 T100
80 T500

Assuming it would be fairly easy to get whatever I need, what should I add on?
 
Your set has plenty of correct denomination chips for a single-table (10-player) T5000 tournament, including sufficient chips for color-ups:

10-player set (10/10/12/7 stacks)
100 x T5
100 x T25
120 x T100
80 x T500
--------------
400 chips

For two and/or three tables, you will need sets with these breakdowns (you will also need to add T1000 and T5000 chips):

20-player set (10/10/7/6/1 stacks)
200 x T5
200 x T25
140 x T100
160 x T500
30 x T1000
15 x T5000
--------------
745 chips

30-player set (10/10/7/6/1 stacks)
200 x T5
200 x T25
210 x T100
180 x T500
40 x T1000
25 x T5000
--------------
1055 chips

All totals account for color-up chips, but none of the above allows for re-buys/add-ons.

You can subtract your current chip counts from the totals needed to determine how many chips to purchase.

What if you wanted bigger starting stacks? Any problems with having more T5000 chips than T1000?
 
With larger starting stacks (10K and up), the T1000s are usually the workhorse chips once the T100s are removed...... not having enough in play can cause issues.

T5000 chips really don't see a lot of action until pretty late in the tournament. Having a bunch in play early causes a lot of change-making and potential problems with identifying bet sizes.
